旅游惯例,落地先逛菜市场,满大街烧椒、剁椒、辣椒粉,然后是各种辣子鸡、脆哨和软哨(我没拍照片),贵州人的灵魂伴侣折耳根(我觉着还行,能接受),还有这个月份的特定水果八月炸(运气好能吃到纯甜的,吃完了会变身豌豆射手),各种粑粑(糯性淀粉类团子的统称),传说中的VC之神——刺梨以及各种衍生品,那个刺梨本体集大酸、大涩、大苦为一体,关键是真有本地人买,不知道他们是泡水喝还是直接嚼了。

吃了两次烙锅,不知道当地人怎么看待这两种形式的,可能第一种中间没有调料盆的就是单纯给外地人吃的,后厨会把点的菜烙熟了放到烙锅里,这时候的烙锅单纯就是保温加热的工具,性子急的人锅还没热估计都吃完了。第二种是在一个小县城吃的48自助(还包括可乐啤酒无限供应,隔壁还有38的),所有食材都是自己烙,中间一个折耳根辣椒蘸水小锅也会煮沸,不管是体验感还是口味都吊打第一个,那个小肠里面一包油,一口爆浆,七里香和鸡皮软糯,当然用餐环境就是没有环境。

接下来是粉面早餐类,贵州境内所有地市基本都有自己代表的粉,按照浇头和汤底不同主要有素粉、羊肉粉、牛肉粉、鹅肉粉……我们吃到了比较有代表的六盘水(水城)羊肉粉、花溪牛肉粉,乌蒙山和阿西里西韭菜坪路上随处都能看到散养的牛羊,所以这两种粉的汤底还是可以称为羊有羊味牛有牛味的!贵阳特色的肠旺面味道也不错,汤头清亮、肥肠弹牙、血旺嫩滑、脆哨酥脆,我加的软哨也很有嚼头,面是比镇江面条碱性更大的面条,外形像竹升面,能吃出明显的碱味,口感硬脆。还有豆花面,面条放在纯豆浆里面,盖上一块豆花,蘸水里面可以加肉丁、香菇之类的浇头,吃法和陕西蘸水面以及日式荞麦面一样,捞出来裹着蘸水吃,最后还能喝豆浆,比较新奇。糯米饭,口味属于怪味,鱼腥草、辣椒、糖、葱花、花生、脆哨……可以和粢饭团一样握成团,也可以装在盒子里,我看本地人就吃三块钱的基础款,加肉的都是游客,味道一般吧,我就在菜场门口买的,没去网红店。还有一个网红的红糖馒头,因为离酒店500米不到,去试了试,怎么说能,幸亏没超过500米,多了我都觉得不值,就是两种红糖馒头,因为用料扎实,没有添加剂,还能吃出一点点红糖的苦味,我剩了点去黔灵山,猴子闻了闻,没吃

火锅类。凯里酸汤在火锅店里独占鳌头,那个酸味不是一般番茄和醋能调出来的,配上薄荷叶、毛辣果、木姜子,能煮鱼也能煮牛肉,是真下饭!地摊火锅(豆豉火锅),附近只要有豆豉火锅,离着二十米就能闻到那股难以形容的臭香味,满满一锅的豆豉,配上猪皮和油炸过五花肉,比酸汤火锅还下饭,老板还会炒一盘辣椒豆豉,光那盘豆豉都能干两碗饭,我们找的这个店在六盘水钢铁厂老厂区,特别像马冬梅家楼下的那种感觉。豆米火锅,酸汤味道没有凯里酸汤那么冲,锅底加了芸豆,配上猪脚,煮到最后豆子绵软,汤底比较醇厚,中规中矩。最后一个是真神,我是在酒店楼下一个很隐蔽的巷子口看到的,因为现在宣传的原因,这类的火锅已经没有了市场,其实二十多年前,比老干妈还早,在没有网络流行的时候,我们听说过的第一个贵州地方特色菜是花江狗肉,这家店没有用花江的名字,因为接连吃过牛肉汤和羊肉汤,对比才发现香肉才是真香,涮完肉,加个粉,完美!直接抵消了我没吃到夺夺粉的遗憾。

小吃类。茅台冰淇淋——就是贵!裹好了买的叫春卷、自己裹的丝娃娃,推荐丝娃娃!恋爱豆腐果——内心嫩滑的鱼腥草容器。炒血旺——重庆江湖菜!怪噜饭——瞎炒饭。牛肉饼——油!洋芋粑粑——贵味土豆泥。接下来推荐两个,香酥鸭——鸭子都快炸成小酥肉的感觉,吃之前先准备好冰饮,想找刺激的可以让店员多放调料粉,吃完嘴唇通电的感觉;冰浆——水果冰沙加糯米饭打碎了,最后再放上一小口糯米饭搅匀,撒上花生碎,比平常吃的冰沙更绵软,抵消了冰沙那种冻牙的刺激,又比冰淇淋更清爽,兼顾了两种冰饮的优点,加上整颗糯米的在口腔中的跳跃感,如果把花生碎换成碧根果或者夏威夷果,和茅台联名能卖88!缺点是容易化,只能现做现吃,建议路过就买一份。
